  1. En una sartén amplia, agregar el aceite y con la mantequilla, dorar el ajo y la cebolla hasta que la cebolla tome un tono cristalino.
  2. Agregar 3 cucharadas soperas de Salsa Tatemada de Habanero de Pacho Sin Gluten. Luego, adicionar la pimienta y la cúrcuma y mezclar bien.
  3. Agregar el vino blanco y cuando hierva, adicionar también el arroz (previamente lavado). Bajar el fuego al mínimo y revolver permanentemente.
  4. Tomar los espárragos y cortarles aproximadamente 5 centímetros de la base (esta parte, se descarta). En una olla con agua hirviendo y sal, cocinar los espárragos como máximo por 2 minutos (con reloj). Antes de sacarlos, tener preparada una fuente con agua con hielo y pasar los espárragos del agua hirviendo a esta fuente. Cuando estén fríos, cortarlos en trozos de aprox. 3-4 cms. y reservarlos, hasta que los vayamos a adicionar al risotto.
  5. Cuando el vino blanco se haya casi consumido, agregar al arroz el caldo de res (o de vegetales), paulatinamente sin dejar de revolver, en la medida que se vaya secando. Agregar la sal.
  6. Cortamos los champiñones en láminas gruesas y se adicionan al arroz. Continuamos agregando el caldo poco a poco, hasta que veamos que el arroz esté blando.
  7. Una vez logremos la consistencia deseada, adicionamos el queso y mezclamos bien hasta que se derrita y la consistencia del arroz esté cremosa. Agregamos los espárragos en trozos y podemos decorar con las puntas.
