 - Con las claras y la otra cantidad de azúcar blanco, hacer un merengue francés.



 - Cuando las yemas estén bien unificadas, agregar la harina suave marcada con el número 1 y con la sal, con el mismo batidor homogeneizar la preparación.Agregar un poco del merengue francés y envolver con el mismo globo. Alternar la harina con el merengue francés, procurar terminar con el merengue francés para mantener el aire en la mezcla



 - Vaciar en una charola con papel estrella y bordes exteriores engrasados para que no se pegue el bizcocho. Hornear a 180°C durante 12 minutos aproximadamente.

 - Sacar el jugo a los limones, obtener la ralladura y
colocar junto con el azúcar blanca y la mantequilla
en una olla.

 - En un bowl aparte, batir el huevo y el azúcar
blanca restante a punto de listón.


 - Templar con la
mezcla anterior una vez que esté hirviendo.
Regresar al fuego y cocinar hasta espesar.
Reservar y usar.

 - Agregar la crema de limón sobre el bizcocho y enrollar cuidadosamente agradando almendras fileteadas y listo a disfrutar.
