 - Pasadas las 24 hrs, sacar del refrigerador; retirar la sal con cuidado, colocarla en un colador para extraer el líquido. Hacer el mismo proceso (colocar una capa de sal, agregar el salmón, esta vez con la piel hacía arriba, cubrir con sal, agregar el líquido, envolver en plástico film y refrigerar por otras 24 hrs.



 - Para los bagels de gravlax. 
Sacar el salmón del refrigerador, retirar toda la sal del salmón, pasarlo rápidamente en agua fría para quitarle la toda la sal, secar con papel de cocina, cortarlo en tiras finas y reservar. Preparar la mise en place.
 - Cortar el bagel a la mitad, dorar en la estufa, colocar una capa de mayonesa, pepino en rebanadas, rebanadas de aguacate, cebolla en juliana, espinaca, láminas de salmón, mostaza y cubrir con la tapa del bagel y listo.
